I would give up processed & preserved and even fresh cheddar in an instant for real fresh unpreserved mozzarella, ricotta, casciotta (which you cannot get stateside at all for some reason), gorgonzola, oh I could go on.... <BR/>I stumbled across your expat interview - I was in Rome from 1964 to 1983. What schools were you with? We may have crossed paths. I was just there in June (eating cheese, what else?)
